WAHLS PROTOCOL REVIEW
IF YOU HAVE BEEN ON THE WAHLS PROTOCOL FOR YEARS
and you know it inside and out, you probably don’t need this
chapter, but if you are just learning about it or think you could
benefit from a review of the guidelines for each of the three levels,
look over this chapter and refer back to it whenever you need a
reminder or help staying on track.
There are three levels to the Wahls Protocol:
The first level, the Wahls Diet, is the most accessible and will
be the only level some people ever need. Many people do quite
well living on the Wahls Diet, with its high volume of vegetables
and fruits and its elimination of gluten-containing grains and dairy
foods. However, for others, it is a stepping-stone to Wahls Paleo.
The second level, Wahls Paleo, has additional elements, such
as organ meats and sea vegetables, as well as additional
prohibitions, such as more limited grains, fruits, and other highcarb food sources. This is the level that I recommend as a goal for
most of my autoimmune patients, as well as those suffering from
other chronic diseases, including obesity.
Finally, for those whose autoimmune diseases are still causing
them difficulty at the Wahls Paleo level, and especially for those
people grappling with neurological problems (such as dementia,
epilepsy, brain injury, and Parkinson’s), I recommend working up
to the third level, Wahls Paleo Plus. This level is a ketogenic diet,
characterized by very high fat levels and very low carbohydrate
levels. This can be difficult for some to follow, but has dramatic
results for many of those who stick to it.
